Molten Chocolate Cakes for Two

Here’s what you need:

  • 4 oz high-quality dark chocolate, chopped
  • 4 tbsp unsalted butter, softened
  • 2 large eggs
  • 1/2 cup sugar
  • 1/4 cup all-purpose flour
  • Pinch of salt
  • Vanilla extract (optional)
  • Fresh raspberries and whipped cream for garnish

Here’s how you do it:

  • Preheat oven to 425°F (220°C). Lightly grease two ramekins.
  • Melt chocolate and butter in a double boiler or microwave in short bursts, stirring until smooth.
  • In a separate bowl, whisk together eggs and sugar until light and fluffy. Gently fold in melted chocolate mixture.
  • Sift in flour and salt, then fold until just combined. Add a splash of vanilla extract if desired.
  • Divide batter evenly between ramekins. Bake for 10-12 minutes, until edges are set and centers are still soft and molten.
  • Let cool slightly before inverting onto plates. Garnish with fresh raspberries and whipped cream, and enjoy the warm, gooey goodness!
